“Arroz con Leche” Chia Pudding

“Arroz con Leche” Chia Pudding

Arroz con leche is one of my childhood faves, and I love this healthier take. I hope you like it!


1 c almond milk

1 tsp coconut cream 

2 tbsp chia seeds 

1-1 ¼ tsp pure vanilla powder, to taste 

¾-1 tsp ground cinnamon, to taste 

2 tbsp maple syrup 

Optional: pinch of fresh grated ginger (to soothe the gut)

Top with  cinnamon, drizzle of maple syrup, pistachios, pumpkin seeds, shortbread cookies 


1. Ideally cook on the stovetop on low heat for about 10 minutes, but if you’re in a rush you can throw it all in a jar:)
