As a MS in Nutrition and Integrative Health, I’m always looking for easy, nourishing snacks to keep on hand during the week, especially ones that actually taste good. This cozy combo checks all the boxes: creamy vanilla chia pudding, tart-sweet blackberry compote, and crunchy stovetop granola. Prep them all ahead of time and you’ll have a satisfying, nutrient-dense snack (or breakfast) ready to go. Make sure you’re hitting 20-30 g of protein for breakfast (add protein-rich yogurt, nut butter, or protein powder to boost protein content).
Blackberries are one of my favorite fruits to cook down. They get syrupy fast and deliver a deep, jammy flavor without needing any / much sweetener. You don’t need to add sweetener here unless you want to. The blackberries and vanilla do a lot of the heavy lifting on their own.
I love layering this combo in jars for a grab-and-go option, but each part stands on its own too.
Functional Nutrition Breakdown
Berry antioxidants:
Blackberries are rich in anthocyanins, the pigments responsible for their dark purple color. These plant compounds have been studied for their role in supporting brain health, inflammation regulation, and even blood vessel integrity.
Omega-3s + fiber from chia:
Chia seeds deliver soluble fiber and a solid dose of plant-based omega-3 ALA—great for digestion, blood sugar support, and satiety. Just two tablespoons pack about 10g of fiber.
Mineral-rich granola:
A homemade stovetop granola gives you healthy fats, plant protein, and minerals like magnesium and zinc—without the excess sugar or additives of store-bought blends. Plus, it’s easy to make grain-free if you want to skip oats.
You don’t need to add sweetener here unless you want to. The blackberries and vanilla do a lot of the heavy lifting on their own.
