Bounty Bar Chia Pudding with Coconut Chocolate Ganache

This chia pudding is my go-to for a quick, high-fiber breakfast that satisfies your sweet tooth without the crash. Inspired by the classic Bounty bar, this version is functional, balanced, and gut-friendly. Think fiber, protein, and healthy fats that support satiety, blood sugar balance, and digestion:)

Note: When increasing fiber, be sure to increase your water intake as well to support digestion and avoid bloating. Fiber without hydration = constipation risk. Also, protein content in this recipe will vary based on the yogurt you opt for, so make sure you add a dollop of yogurt on the side, a protein shake, or your personal fave to boost your total protein intake/meal to 20-30 g protein (to support mood, hormone, and blood sugar balance).

Functional Nutrition Breakdown

  • Chia Seeds: are rich in omega-3s, prebiotic fiber, and antioxidants. Just two tablespoons provide about 10g of fiber ⅓ of your recommended daily fiber intake.
  • Protein-Rich Yogurt: Supports muscle repair, satiety, and metabolic health. Aim for 15-20g of protein per serving across your full breakfast. Also, pick a yogurt that contains live cultures to nourish your gut microbiome!
  • Coconut Milk + Ganache: Coconut milk’s healthy fats enhance nutrient absorption and keep you fuller longer, while the dark chocolate provides polyphenols that support gut and cardiovascular health.

Bounty Bar Chia Pudding (Single Serving)

Ingredients

  • 2 tbsp chia seeds
  • ½ c bottled coconut milk
  • ½ c protein-rich yogurt (dairy-free or Greek)
  • ½ tbsp unsweetened shredded coconut
  • Optional: 1 tbsp pure maple syrup, to taste

Chocolate Ganache Topping

  • 2 tbsp hot (not boiling) bottled coconut milk
  • 2 tbsp dark chocolate chips or chopped dark chocolate bar (70% or higher cacao)

Make it

  1. In a mixing bowl, whisk together the chia seeds, yogurt, coconut milk, shredded coconut, and maple syrup (if using).
  2. Let sit for 10–15 minutes, whisk again, and transfer to the fridge to thicken for at least 2 hours (or overnight for meal prep).
  3. For the ganache: add hot coconut milk to the chocolate, let sit for 30 seconds, then stir until smooth.
  4. Once the pudding is thickened, pour the ganache on top and refrigerate briefly to set. Serve chilled and enjoy as a breakfast, snack, or dessert.
