🌮Starting the weekend with this simple but delicious breakfast taco:
Organic stone ground corn tortilla
Instant Pot Black Beans (pressure-cooking eliminates most lectins, so easier to digest))
Breakfast potatoes
Organic pasture-raised egg
Mojo verde sauce (green herby Peruvian sauce)
Red bell crema
Chopped red onion & cilantro
🌽Per mastcell360.com, corn is considered lower histamine (individual tolerance will vary). I don’t have corn too often, but when I do I try to make sure it’s organic (organic corn cannot be GMO p/USDA). I love organic stone ground corn tortillas because they only have 3 ingredients: organic stone ground corn, water, and lime. As a bonus, this recipe includes low histamine veggies that lower histamine: garlic, parsley, cilantro, red onion, and yellow onion!

BREAKFAST TACO:
BREAKFAST POTATO INGREDIENTS
¾ small yellow onion, finely chopped
2 garlic cloves, finely chopped
3 small red, orange, yellow bell peppers
5-6 small potatoes, peeled and chopped
Drizzle of extra virgin olive oil
Drizzle of avocado oil
Sea salt, to taste
Crushed pink peppercorns, to taste
MAKE IT
1. Warm oil in a pan on medium heat
2. Once hot, saute onions until golden brown, then add garlic and saute for a couple more minutes.
3. Add potatoes, and mix well with onions and garlic.
4. Once potatoes have crisped up and are all pretty evenly golden, add bell peppers.
5. Stir and mix frequently, so all potatoes continue to get crispier and onions don’t burn.
6. Season with sea salt and crushed pink peppercorns.
7. Once potatoes are soft when poked with a fork, turn up the heat to high and continue stirring and mixing.
8. Remove from heat, and adjust seasoning if necessary.
9. Prepare the other breakfast taco ingredients.
Organic stone ground corn tortilla (tend to be a little more coarse than regular corn tortillas, so microwave, then wrap the warmer tortillas on a damp paper towel)
