Caramel Granola

Fall in your oven, with all the cozy caramel notes in every bite. This is the perfect meal prep too!

 

INGREDIENTS

 

Homemade caramel

1 c cashews, chopped

3 tbsp chia seeds

1/2 c hemp hearts 

1 c GF oats

1 c unsweetened shredded coco (desiccated)

1/3 c pumpkin seeds

1 tbsp virgin coco oil

 

MAKE IT

 

1. Pour all dry ingredients into a bowl. Add caramel, then coconut oil. Spread out on a parchment-lined baking sheet. Optional: drizzle  a bit of maple syrup on top to add a but more sweetness and moisture if it’s too dry.

2. Bake for 20 min at 325F, then flip and bake for another 5 minutes. Allow to cool on the baking sheet, then store in the refrigerator in an air-tight container.
