Coconut Tzatziki (low histamine)

🇮🇳This dish originated in India, and arrived in Greece via trade routes in Persia.

🥥This coconut tzatziki sauce is so delicious. It’s my fave sauce now, because it’s so light and refreshing, yet so flavorful. I know I say that every time.😆 It’s just so good though, tastes like Spring. I drizzled so much on my Greek-inspired taco (I’ll post the recipe for the taco tomorrow).

🥣You’ll need just 5 ingredients to make this coco tzatziki:

 

INGREDIENTS (serves 1)

 

Refrigerated coco cream (scoop out 2 tbsp coconut cream-just coco cream, not the coco water)

½ tsp lime juice

sea salt, to taste

1 tsp fresh dill, finely chopped

4 slices of cucumber, peeled and chopped

 

MAKE IT

1. In a mixing bowl, whip all ingredients with a fork, minus cucumber, for a Greek yogurt consistency. You can also blend in the food processor (pictured), for a creamier consistency.

2. Pour into a serving bowl, and add chopped cucumber. Cover, refrigerate, and serve chilled.

 

**GF/DF/LOW-HISTAMINE (I followed mastcell360 low histamine foods list very strictly initially, then added some foods from the SIGHI list as I began to tolerate more foods, all under the care of a dietitian. A low histamine diet is restrictive and not meant to be followed long-term, as nutrient deficiencies may develop.)**
