Copycat Taco Bell Ground Beef (grass-fed)

This grass-fed ground beef recipe is better than the original! It’s so versatile too. You can prepare it for taco night, serve it with nachos and tacos, or pair it with air-fried baby potatoes for a throwback to Taco Bell’s Fiesta Potatoes days.

Ingredients

  • 1 lb grass-fed ground beef

  • 2-6 oz cans vegetable juice blend (I like Lakewood)

  • 1 tbsp tapioca flour

  • 3 tbsp Taco Bell copycat taco seasoning:

     

    2 tsp cumin, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp smoked paprika (can sub sweet paprika if better tolerated), 1/8 tsp black pepper, 1 tsp sea salt

  • 1/2 lime, juice (to squeeze all over once finished cooking and removed from heat

  • Optional: 1 tbsp chili powder and cayenne, to taste

Directions

  • Set Instant Pot to saute function. Add beef and break it up with a wooden spatula. Mix and cook for 5 minutes (you'll note a color change as it cooks).

  • Add both cans of vegetable blend juice, and mix. Add taco seasoning, and mix. Set to pressure cook function for 25 minutes. 

  • Quick manual pressure release. Set to saute function and cook for 5 minutes (stirring often), until more liquid has absorbed/desired consistency. Once it's done cooking, remove from heat. Add tapioca flour, and mix until well combined. Squeeze lime juice all over, and mix well before serving. Serve with tacos, nachos, or air fry baby potatoes with evoo and sea salt for a Fiesta Potatoes throwback.
