Dairy-free Mexican Horchata

As a MS in Nutrition and Integrative Health, I’m all about bringing comfort and nostalgia into alignment with functional nutrition. One of my favorite ways to do that? Reinventing beloved cultural classics into more gut-supportive, anti-inflammatory versions, without sacrificing tradition. This plant-based horchata is one of those recipes!

Growing up, horchata was one of my favorite drinks, especially during the holidays. Creamy, sweet, ice-cold, and spiced with cinnamon, it always felt like a treat. Now, I’ve created a nourishing, dairy-creamy cashew horchata, which is gluten-free, dairy-free, and totally kid-friendly.

Functional Nutrition Breakdown

Cashews = plant-based creaminess + mineral support: Cashews are rich in magnesium, zinc, and healthy fats, all of which support nervous system balance, immune health, and blood sugar regulation. Blended cashews create a creamy texture without needing dairy or gums.

Ceylon Cinnamon = blood sugar support + antioxidant power: Unlike conventional cinnamon, Ceylon cinnamon is gentler on the liver and delivers polyphenols that help stabilize post-meal blood glucose and help reduce inflammation.

Dates = low-GI sweetness + phytonutrients: Medjool dates deliver natural sweetness along with fiber, potassium, and antioxidants like flavonoids. I prefer using dates because they promote blood sugar balance, but you can use the sweetener you prefer.

Make it

  1. In a high-speed blender, blend cashews, 2 cups of water, and cinnamon until super creamy.
  2. Pour the mixture into a large pitcher or bowl. Strain if needed (depending on your blender).
