Gut-healthy Garlic Green Beans (preserve flavor & nutrients)

As a MS in Nutrition and Integrative Health, I’m always on the lookout for simple cooking methods that preserve flavor and nutrients. One of my favorites? Steam-sautéing. I learned this cooking method in my MS in Clinical Nutrition Whole Foods Cooking Lab, and it’s been my fave way to cook veggies since. It’s the perfect way to cook green beans, Brussels sprouts, or broccoli while keeping their crunch, color, and all that plant power intact.

This recipe is on regular rotation in my kitchen. It’s fast, flavorful, and pairs with just about any protein or grain. Plus, cooked veggies are easier to digest for many people, especially when lightly steamed and finished with a flavorful sauté.

Functional Nutrition Breakdown

Nutrient retention, the smart way:  Steam-sautéing minimizes nutrient loss compared to boiling or overcooking. Quick steaming locks in water-soluble vitamins like vitamin C and folate, while the quick sauté boosts flavor without compromising texture.

Green beans = fiber, folate, and plant polyphenols: Green beans are a solid source of gut-loving fiber, plus micronutrients like folate and vitamin K. They also contain flavonoids and carotenoids, which play a role in inflammation modulation and antioxidant defense.

Extra virgin olive oil = healthy fats + anti-inflammatory compounds: Rich in monounsaturated fats and polyphenols like oleocanthal, EVOO supports heart health and has anti-inflammatory properties, especially when used gently over medium heat.

Garlic = flavor with functional benefits: Garlic contains sulfur compounds like allicin, which supportt immune function, reduce inflammation, and support cardiovascular health. It also adds depth and savoriness to any veggie dish, especially when sautéed.

This recipe is naturally gluten-free, dairy-free, and plant-based. You can easily add sesame seeds, citrus zest, coconut aminos, or fresh herbs for extra flavor and texture.

STEAM-SAUTÉED GREEN BEANS

Ingredients

  • 1 lb green beans
  • 2 garlic cloves, minced
  • 1 tbsp extra virgin olive oil
  • ⅓ c filtered water
  • ½ tsp sea salt

Make it
Add green beans, garlic, olive oil, water, and sea salt to a large deep skillet over medium heat.
Cover and bring to a boil, then steam until the beans are vibrant and just tender (about 5–10 minutes depending on size).

Remove the lid and let the water evaporate—about 1–2 minutes. Continue to sauté the beans for another 1–2 minutes to deepen flavor. Add optional fresh herbs, citrus zest, coconut aminos, or sesame seeds.  Adjust salt and add black pepper if desired. Store any leftovers in an airtight container. These are just as good the next day.

Other fun ways to enjoy this method:

  • Try it with Brussels sprouts, broccoli, or asparagus
  • Use as a quick veggie side for any protein
  • Chop leftovers and mix into scrambled eggs or stir-fries
