Mango Sticky Rice

🍚This recipe was inspired by one of my favorite restaurants in San Francisco.

🥭 Mango sticky rice is delicious as a yummy side to a savory dish, or as a dessert (minus the cilantro). I love to have this with grilled chicken and veggies.

💜 It’s such a treat to be able to safely have foods you truly enjoy, that remind you of your old life (pre-chronic illness).

INGREDIENTS

1 ½ c dry long-grain white rice 

1 c water

1 can unsweetened coconut milk (fave is Native Forest Simple Coco Milk-no additives/BPA-free can)

1 tbsp coconut sugar 

Pinch of Celtic Sea Salt

2 tsp extra virgin coco oil 

1 cup diced mango 

Garnish: small handful of chopped cilantro and a slice of lime 

MAKE IT

1. Bring rice, water, coconut milk, coconut oil, coco sugar, and sea salt to a boil in a small pot over medium-high heat. 

2. Reduce heat to low, cover, and simmer rice until tender, 15–20ish minutes. 

3. Remove from heat, let rice sit (covered) for 5 minutes.

4. Fluff with a fork, stir in mango, and garnish with cilantro right before serving.
