Meat Sauce with Spaghetti Squash

This healthy, grass-fed meat sauce is packed with nourishing ingredients, and delivers on all the traditional flavors too. I paired it with frozen spaghetti squash for more veggies, but you can pair it with pasta or rice as well. It has a bit of a spicy kick, but tastes amazing without it as well.

Ingredients

  • 2 tbsp extra virgin olive oil

  • 1 lb grass-fed ground beef

  • 1 small yellow onion, finely chopped

  • 3 garlic cloves, minced

  • 1-15 oz can San Marzano or fire-roasted tomatoes (blended) OR tomato sauce

  • 1-6 oz can tomato paste

  • 1 c water or beef broth

  • 1 tsp dried parsley, to taste

  • 1 tsp dried basil, to taste

  • 1/2 tsp chili flakes, to taste

  • 1/2 tsp sea salt, to taste

  • 1 tbsp coconut sugar

  • 1 small bag frozen spaghetti squash (prepare according to instructions on the bag)

Directions

  • Season ground beef with salt and pepper. In a large skillet, add the beef and chopped onions, and brown. Drain excess grease. 

  • Add blended tomatoes, tomato paste, salt, spices, and coconut sugar to the skillet. Stir well to combine, and simmer for 25 minutes. Serve sauce over spaghetti squash, and enjoy!
