🇲🇽Celebrating Cinco de Mayo with this Mexican seven-layer cocktail. It has all the traditional yummy layers, with a bit of a twist to keep it low-histamine, without sacrificing any of the delicious flavors and textures. It’s so good, the whole fam loved it!
The layers, served with a side of @sietefoods GF Taco Shells (broken up, like chips:):
🌱Instant Pot black beans (refried with @chosenfoods Avocado Oil) – cook on medium heat in a pan with avocado oil for 5 minutes, remove from heat, and whip with an immersion blender.
🧀@goodplanetfoods Shredded Mozzarella Cheese sauce (VG/free of common allergens) – can omit
❤️Sliced sweet mini bells
🌿Finely chopped fresh cilantro
🧅Finely chopped red onion + sprinkle of Maldon salt + lime slice
MAKE IT
1. Cheese sauce: warm 4 tbsp water until hot, add the shredded cheese, and whip until fully melted and combined.
2. Layer each ingredient on top of the other, starting with the refried black beans, cheese sauce, sofrito rice, cilantro sauce, sweet mini bells, chopped cilantro, and red onion + Maldon salt flashes.
Serve with your fave chips!
