Mint Watermelon Salad

It’s watermelon season, and I couldn’t be more excited! This is one of my fave salads. It’s so simple, just watermelon and mint leaves. The olive oil, lime juice, and sea salt dressing adds the finishing touch and IT IS SO GOOD! The longer the watermelon marinates in the dressing, the more amazing it tastes.

 

INGREDIENTS (for an individual portion)

 

Seedless watermelon, cubed

Mint leaves, chopped into ribbons

Dressing:

2 tsp extra virgin olive oil

½ tsp lime juice

Sea salt, to taste

Add fresh jalapeno if tolerated

 

MAKE IT

 

1. With a spoon, mix the watermelon and mint ribbons in a bowl. Add dressing, and mix again (gently). Serve chilled.

Optional: add a bit more salt all over if you’d like.

*If you make a larger portion, just keep in mind that ½ tsp of lime juice is considered low histamine (Dr. Beth O’Hara). If you add more than that, take that into account when serving (portions)*
