Mojo Verde (Green Herby Peruvian Sauce)

❤️One of the things I love most about Peruvian cuisine is all of the amazing sauces. Mojo Verde is one of my faves. I recreated it, minus the vinegar it’s traditionally made with.

🧄It’s citrusy, garlicky, and smooth and creamy. It’s the perfect sub for hot sauce. You’ll need only 8 ingredients to make it: cilantro, parsely, sweet mini red bells, fresh garlic, lime juice, olive oil, cumin, and sea salt.

🥣I had some with my Latin bowl for lunch (rice, beans, chicken were all part of my frozen foods weekly meal prep): coconut rice, Instant Pot black beans, taco-seasoned shredded chicken, baked sweet potato slices, chopped celery, and fresh parsley. It wasssss 💣🙌🏽. You can throw this sauce on any protein, and it’ll blow your mind.😉

INGREDIENTS (serves 2)

Handful of fresh cilantro, finely chopped

Half handful of fresh parsley, finely chopped 

2 fresh garlic cloves, finely chopped

1 red sweet mini bell pepper, finely chopped

¼ tsp ground cumin, more to taste  

¼ tsp sea salt, more to taste 

Juice of half lime (On average, half lime has 1 tsp lime juice. Have half tsp lime juice to keep it low-histamine. So, share half of the sauce with someone/save it for later).

7 tbsp olive oil 

MAKE IT

1. Add all ingredients to a food processor. Blend until creamy smooth. Taste, and adjust salt and cumin if needed. I added an extra sprinkle of each.

2. Serve it with: taco-seasoned shredded chicken, coconut oil rice, Instant Pot black beans, and fresh veggies.
