Nutrient-dense White Rice

This simple and healthy rice dish is cooked in bone broth, salt, and a little bit of DF butter. Add frozen veggies, and enjoy! This recipe is kid-approved too (well, except for the green beans;)!

Ingredients

  • 1 c long-grain rice

  • 2 c chicken bone broth

  • 1 tsp sea salt, to taste

  • 1 yellow onion, diced

  • 2 garlic cloves, minced

  • 1 tbsp extra virgin olive oil

  • 1 tsp DF butter

  • Optional: squeeze of lime (once done cooking)

Directions

  • Add extra virgin olive oil to a medium pot, on medium heat. Once oil is hot, add onions and cook (stirring often). Once onions are translucent, add rice and cook until rice is golden. 

  • Add chicken bone broth, and a pinch of salt. Bring to a boil, then turn down heat to low, add butter, cover, and cook for 20 minutes. Adjust salt if necessary, and fluff with a fork.
