As a MS in Nutriton and Integrative Health, I’m always looking for fun ways to eat more fruits and veggies. They effortlessly deliver fiber, vitamins, and minerals. If you haven’t cooked with persimmons before, this is your sign to start. They’re sweet, naturally thick when cooked down, and make the perfect base for a creamy, nourishing compote. I love adding this one to chia pudding, oats, yogurt, or even as a topping for toast.
If your persimmons are truly ripe—soft, jelly-like, and honey-sweet—you won’t need to add any sweetener. I’m not anti-maple syrup (and it’s fine if you want a splash), but it’s worth trying the base recipe first.
Functional Nutrition Breakdown
- Vitamin A powerhouse: Just one persimmon is loaded with vitamin A, which supports your immune system, eye health, and that glowy skin we all want.
- Gut-loving fiber: Fuyu persimmons are a great source of soluble fiber that helps feed your gut microbiome and keeps digestion moving smoothly.
- Warming spices: Cinnamon and ginger are naturally anti-inflammatory and help support blood sugar balance as well.
You don’t need to add sweetener here unless you want to. Ripe persimmons are plenty sweet on their own.
Ingredients
- 4 ripe Fuyu persimmons, peeled and chopped
- ½ teaspoon Ceylon cinnamon
- ⅛ teaspoon ground ginger
- Pinch of sea salt
- 1 tsp lemon juice
- ½ tsp pure vanilla extract
- ¼ c filtered water
- Optional: maple syrup or honey to taste
- Optional: more filtered water to thin if needed
Make it
- Add everything except the vanilla to a small pot over medium heat.
- Cook until the mixture starts to look syrupy, about 10 minutes. Stir every now and then.
- Reduce the heat slightly and cook for another 10 minutes. If you’re skipping added sweetener, you may want to add a splash more water to help it cook down.
- Turn off the heat and stir in the vanilla.
- Let it cool, then blend in a high-speed blender until smooth and creamy. If it’s too thick to blend, just add a bit more filtered water.
- Store in an airtight container in the fridge.
Other fun ways to enjoy this compote:
- Swirl into your chia pudding or overnight oats
- Layer with protein-rich yogurt for a cozy gut-friendly parfait
- Spread on toast with almond butter
- Use as a naturally sweet base for fall smoothies
