Pumpkin Cheesecake Chia Pudding (anti-inflammatory omega-3s & fiber)

As a clinical nutrition student deep in the middle of fall semester and practicum rotations, quick and nourishing meals are non-negotiable. I need food that supports my energy, digestion, and focus, without the crash that comes from high-sugar snacks or skipping meals altogether.

This warm chia pudding bowl has become a seasonal favorite. It’s rich in fiber, healthy fats, and protein, all of which help keep blood sugar steady and hunger at bay. The pumpkin purée adds subtle sweetness and micronutrients, while the warming spices make it feel cozy and comforting.

How this pudding nourishes your body

  • Chia seeds are a concentrated source of soluble fiber and ALA (alpha-linolenic acid), a plant-based omega-3 fat. This combination slows digestion, promotes satiety, and supports beneficial gut bacteria.
  • Pumpkin purée offers beta-carotene and fiber to help add to your total goal of at least 25 g of fiber for women and 38 g for men.
  • Cream cheese (DF) adds richness and fat for satiety.
  • Pumpkin pie spice and cinnamon bring in polyphenols, which have anti-inflammatory properties and may improve insulin sensitivity (use Ceyon cinnamon, if possible).
  • Maple syrup or honey, when used in small amounts and paired with fiber and fat, provide flavor without a major glucose spike.

This chia pudding has become a staple in my weekly routine. It’s quick to prep, deeply satisfying, and supportive of both gut and blood sugar health. You can easily adjust the texture or protein content by adding a scoop of protein powder or layering it with protein-rich yogurt. I hope you try it!
