  • 2–3 Medjool dates, pitted
  • 1 tsp vanilla extract
  • ½ + 1/8–¼ tsp pumpkin pie spice
  • ¼ tsp ground cinnamon
  • Pinch of sea salt
  • 2 tbsp dark chocolate chunks (break up your favorite dark chocolate bar)

 

Make it

  1. In a blender or food processor, blend almond milk, pumpkin purée, dates, nut butter, vanilla, cinnamon, pumpkin spice, and sea salt until smooth.
  2. Stir the mixture into chia seeds in a jar or glass container. Let sit for 5 minutes, then stir again to avoid clumping.
  3. Refrigerate and let it sit overnight before enjoying for a thick and creamy finish. 
  4. Before serving, stir in the chocolate chunks and add a splash of almond milk if the pudding is too thick.
