Ramen (low histamine)

🥣This homemade ramen is such a treat. It’s so flavorful, packed with nourishing superfoods, and is perfect for soup szn.

🍗Homemade lower histamine chicken broth (all the veggies, chicken, spices, herbs, and sea salt)

🥚Slightly jammy egg (egg white fully cooked)

🌱Spring onions (green part only)

🥬Crispy skillet-fried kale with sesame oil + sea salt, garlic powder, and sesame seeds

💚Squeeze of lime juice


INGREDIENTS (serves 1 – just add more of each ingredient to serve more)

Bowl of homemade chicken broth (all the veggies, chicken, spices, herbs, and sea salt). Sub with veggie broth to keep it vegan (see ingredients and recipe below)

Jammy egg

1 tbsp chopped spring onions (green part only)

5 kale stems (remove leaves) + garlic powder and sea salt

1 tsp sesame oil

Squeeze of lime juice (½ tsp is low histamine per mastcell360.com)


CHICKEN BROTH INGREDIENTS (big batch: use 1 bowl for this recipe, and save the rest)


3 lb chicken wings

1 c baby rainbow carrots

1 yellow onion, peeled and halved

1 head of garlic, peeled

2″ piece ginger, peeled

Handful of thyme (love this to keep bad gut bugs at bay) + any other herbs you love

2 leeks, tops cut off

1 stalk celery, bottoms cut off

9 c water

3/4 tsp whole pink peppercorns

2 tbsp extra virgin olive oil

Once cooked:

3 tbsp sea salt, to taste


Ground cumin and sweet paprika, to taste



I use this broth as the base to my soups and ramen. I store it in the freezer, and thaw individual portions as needed

1. Combine chicken wings, rainbow carrots, onion, garlic, leeks, ginger, thyme, and peppercorns in Instant Pot. Pressure cook for 2 hours.

2. Add sea alt. Cumin and sweet paprika are optional.

3. Strain broth through a fine-mesh sieve into a large bowl, and discard all solids. Place in the refrigerator to cool, and remove any fat that is sitting at the top. Freeze in individual portion silicone baby food trays or glass Tupperware containers. Good for up to 6 months frozen.

A low histamine diet is restrictive and not meant to be followed long-term, as nutrient deficiencies may develop).**
