Salsa Verde Taquera (+superfoods) – enjoy with your fave protein, eggs, & chips

This one is a fave, because it’s so tasty and packs in superfoods that serve the gut. Don’t wait for Taco Tuesday, make it now!




2 tomatillos

2 jalapeños, deseeded and deveined 

¼ small yellow onion

Sea salt, to taste 

Generous pour of avocado oil (add more as needed while lightly charring)

1 tsp pumpkin seeds (pepitas)

3 tbsp filtered water 

Last step:

2 drizzles of avocado oil once blended. Mix in with a spoon.

Another version of this salsa: add 1 sliced zucchini and char with the other ingredients




1. On medium heat in a pot or frying pain, lightly char tomatillos and jalapeños in avocado oil. A couple of minutes before removing from heat, add in pumpkin seeds. Mix them in. Remove from heat, and let cool. Blend all ingredients until creamy, then add water. Blend for a couple of seconds. Once you are done blending, add two drizzles of avocado oil, and mix with a spoon. Pour into an air-right container and store in the refrigerator.
