Saucy Chicken Fajitas

This seasoning is one of my faves. It makes for the juiciest, saucy fajitas. I’ll never go back to regular fajitas. Grab some chips!

 

INGREDIENTS

 

3 bonekines, skinless chicken breasts

3 bell peppers, thinly chopped 

1 red onion, finely chopped

 

MARINADE INGREDIENTS (I like my fajitas saucy so I make two portions of this seasoning mix, and I sprinkle with my heart-DO YOU:)

 

2 tbsp avocado oil 

Juice of 1 lime 

3-4 tbsp chili powder 

1 tsp ground cumin

½ tsp smoked paprika

1-2 tsp coconut sugar

1 tsp garlic powder 

1 tsp onion powder 

½ tsp ground black pepper 

Sea salt, to taste (I add 1 tsp, and adjust if needed)

Small handful cilantro, chopped

 

MAKE IT

 

1. Cut chicken and veggies into thin slices. Let marinate for a minimum of 30 min (ideally 2 hours). 

2. On medium heat, cook veggies for 8 minutes, with a pinch of salt , stirring occasionally. Remove from heat, and place in a bowl. Add more avocado oil, then chicken. Cook for 4 minutes on each side. Add bell peppers back in. Remove from heat, and serve with rice, tacos, avocado slices, and dairy-free feta.
