Saucy Chicken Fajitas

This seasoning is one of my faves, because you can not only use it to make delicious fajitas, but also shredded chicken, grilled chicken breast, or anything else you want to add flavor to! See my oven-baked fajitas recipe for step by instructions on how to make fajitas from scratch.

INGREDIENTS

3 bonekines, skinless chicken breasts

3 bell peppers, thinly chopped 

1 red onion, finely chopped  

MARINADE INGREDIENTS 

2 tbsp avocado oil 

Juice of 1 lime 

3-4 tbsp chili powder 

1 tsp ground cumin

½ tsp smoked paprika

1-2 tsp coconut sugar

1 tsp garlic powder 

1 tsp onion powder 

½ tsp ground black pepper 

kosher salt, to taste

Small handful cilantro, chopped

MAKE IT

1. Cut chicken and veggies into thin slices. Let marinate for a minimum of 30 min (ideally 2 hours). 

2. On medium heat, cook veggies for 8 minutes, with a pinch of salt , stirring occasionally. Remove from heat, and place in a bowl. Add more avocado oil, then chicken. Cook for 4 minutes on each side. Add bell peppers back in. Remove from heat, and serve with rice, tacos, avocado slices, and dairy-free feta.
