S’mores Cookies

INGREDIENTS

 

1 c GF oat flour 

1 c almond flour 

1 c coconut sugar 

½ tsp baking soda 

¼ tsp sea  salt

½ tsp ground cinnamon

1 tsp pure vanilla powder/extract 

½ c melted vegan butter

1 flax egg (mix 3 tbsp filtered water + 1 tbsp flax meal), or an egg

½ c vegan marshmallows (truly optional)

½ c dark chocolate chips 

 

MAKE EM

 

1. Mix wet ingredients, then mix dry ingredients in a separate bowl. Add dry ingredients to wet ingredients, and mix with a spatula until fully combined. Refrigerate x 15 minutes.

2. Line a baking sheet with parchment paper. Roll cookies into 2 tbsp portioned balls, and genttly pat dough to flatten just a bit. Bake 6-8 minutes at 350F. Edges should be chewy, and center should be gooey
