As a MS in Nutrition and Integrative Health, I’m always crafting meals that feel indulgent but are grounded in supporting gut health, blood sugar balance, and metabolic support. This Tiramisu Chia Pudding is one of those “sweet spot” recipes, rich in omega-3s, probiotics, fiber, and plant-based energy to keep you full, focused, and feeling good. You have to make this, if you’re in the mood for a creamy, protein-rich pudding with healthy fats, fiber, and gut support!
Think of this as a functional twist on dessert-for-breakfast. With creamy yogurt, a kick of espresso, and the fiber-packed power of chia seeds, it delivers nutrients most people don’t get enough of, especially essential fatty acids and gut-supportive compounds. And yes, it actually tastes like tiramisu!
Whether you enjoy it as a quick breakfast or a mid-afternoon snack, this is a recipe that checks all the clinical nutrition boxes.
Reminder: The protein content of this pudding will vary based on the yogurt you opt for. To make this a complete breakfast, pair it with a protein shake, 1–2 boiled eggs, or collagen coffee to hit the 20–30g protein mark. That’s the minimum most people need per meal to support blood sugar balance, metabolism, and hormone health (especially key in the morning).
Functional Nutrition Breakdown
Chia Seeds = omega-3s, fiber, and minerals: These tiny seeds are a powerhouse of ALA (alpha-linolenic acid), a plant-based omega-3 fatty acid that helps reduce inflammation and support hormonal health. They’re also rich in soluble fiber, which feeds your beneficial gut microbes and helps regulate blood sugar. You’re also getting calcium, magnesium, and phosphorus for bone and nervous system support.
Yogurt = probiotics + protein: Choose a plain, unsweetened yogurt that’s rich in live cultures and protein (Greek-style or coconut-based with added protein). It adds a creamy texture to this recipe, and diversity to your gut flora, which is directly linked to digestion, mood, immunity, and metabolic health.
Espresso = flavor + phytonutrients: Coffee isn’t just caffeine. It contains chlorogenic acids, which act as antioxidants and can improve glucose metabolism.
