Tres Leches Overnight Oats (gut-friendly & fiber-rich)

This recipe was inspired by my heritage and my ongoing journey as a clinical nutrition student. I wanted to capture the creamy indulgence of tres leches cake, without the blood sugar spike or digestive burden of the traditional version. This overnight oats variation uses nourishing whole-food ingredients that support gut health, metabolic balance, and sustained energy. It’s creamy, slightly sweet, and packed with fiber, healthy fats, and protein.

 

How This Oatmeal Supports Gut and Metabolic Health

Oats contain beta-glucan, a soluble fiber known to lower LDL cholesterol, improve insulin sensitivity, and feed beneficial gut bacteria. It’s one of the most researched prebiotic fibers in the clinical nutrition world. Chia seeds bring plant-based omega-3 fatty acids (ALA), along with mucilaginous fiber that supports gut motility, feeds commensal microbes, and contributes to satiety. They also help create that thick, satisfying texture we love in overnight oats.

 

Balanced macros matter. Unlike many commercial oat-based breakfasts that are carb-heavy and protein-poor, this version includes quality protein, fiber, and fat to promote blood sugar stability, reduce cravings, and support microbiome resilience.

 

The Recipe
Yields 1 serving | Approx. 11.5 g fiber & 11 g protein

 

Ingredients

  • 1/3 cup gluten-free organic rolled oats
  • 2/3 cup unsweetened almond milk
  • 3 tbsp canned light unsweetened coconut milk
  • 1 tbsp pure maple syrup or honey, to taste
  • 1 tsp vanilla extract
  • 1/4 tsp ground cinnamon (or more to taste)
  • Pinch of sea salt
  • 1 tbsp chia seeds
  • 2 tbsp protein-rich vanilla yogurt
  • 7 fresh strawberries, sliced
  • Optional: For more protein, add 1 scoop vanilla protein powder and adjust liquid/spices accordingly, or increase yogurt

 

Instructions

  1. In a small jar, combine chia seeds, almond milk, coconut milk, yogurt, maple syrup or honey, vanilla, cinnamon, and sea salt.
  2. Stir in the oats until fully incorporated.
  3. Fold in 2 tbsp of the sliced strawberries.
  4. Save the remaining strawberries for topping before serving or plating.
  5. Cover and refrigerate overnight or for at least 4 to 6 hours.
  6. Enjoy cold straight from the fridge, or warm gently before serving.

 

Functional Notes

  • Coconut milk adds richness and MCTs, which can support gut lining integrity and energy metabolism
  • Yogurt introduces beneficial bacteria and additional protein
  • Cinnamon helps modulate postprandial blood glucose and adds flavor without sugar (use Ceylon cinnamon, if possible)

 

Serving Tips
Top with extra yogurt, sliced strawberries, shredded coconut, or a few chopped nuts for added texture. This recipe also works well as part of a batch prep rotation.
