Warm Caramelized Bell Pepper & Onion Dip

🥣The dip I made yesterday with caramelized bell peppers and onions didn’t show off the deep flavors of these gooey caramelized veggies as I’d hoped.

 

💜So, here I am making the veggies again today, because they were so damn good. This is the dip! It’s so simple, but these ingredients DELIVER: yellow and orange bell peps, yellow onion, garlic, extra virgin olive oil, and sea salt. As a plus, orange and yellow bell peps and onions are rich in quercetin (think antihistamine and anti-inflammatory properties).

 

😋Serve it warm, with your fave chips, and start dippin’!

 

 

INGREDIENTS

 

3 orange and yellow bells, seeds/membranes removed

2-3 garlic cloves, finely chopped 

2 small yellow onions or 1 large, finely sliced

2 generous drizzles extra virgin olive oil

½-¾ tsp sea salt, to taste

Optional: pinch garlic powder

 

MAKE IT

 

1. Add olive oil to a pan on medium heat. 

2. Saute onions for about 10 minutes until caramel brown. Add garlic and saute for 1 more minute.

3. Add bell peppers, and mix. Add sea salt. Saute for 1 minute, then cover and cook for 10 minutes.

4. Taste, and add a bit more salt if necessary. Serve warm, with your fave chips.
