Warm Greek Potato Salad (low histamine)

One of my favorite things about this season, is warm fall salads. This warm Greek potato salad is the fall version of the OG;)

You’ll need just 5 ingredients to make it:

🥔Boiled baby gold potatoes (warm)

🌿Fresh basil

❤️Red bell

🫒Garlic-infused extra virgin olive oil

🧂Sea salt

🥣Optional: 1 block of @violife_foods Just Like Feta, cut into cubes (free from dairy, soy, gluten, lactose, nuts and preservatives-not labeled low histamine)

**Here are the feta ingredients: filtered water, coconut oil, potato starch, sea salt, glucono delta lactone, flavor (vegan sources), olive extract, vitamin B12.**

🧄Garlic-infused olive oil ties all the flavors together, and this creamy plant-based feta cheez finishes each bite off with a sprinkle of epic (you’ll never miss the real thing). It gets a little soft once you mix all the ingredients, and melts just a bit into each ingredient. You gotta make it;)!

INGREDIENTS

1 small bag baby gold potatoes 

1 red bell pepper, membranes removed and deseeded 

1 small red onion, thinly sliced 

Sea Salt, to taste 

3 tbsp garlic-infused olive oil

Optional: 1 block of @violife Just Like Feta, cut into cubes (free from dairy, soy, gluten, lactose, nuts and preservatives)

**Here are the ingredients: filtered water, coconut oil, potato starch, sea salt, glucono delta lactone, flavor (vegan sources), olive extract, vitamin B12.**

MAKE IT

1. Wash and clean potatoes with a veggie brush. Cut in half and place in a medium pot with water and a sprinkle of sea salt. Remove from heat once soft when poked with a fork, and drain water.

2. In a large bowl, add onion, bell pepper, and basil. Once the potatoes have cooled a bit, add them to the bowl. 

3. Add olive oil, and sea salt. Mix carefully and gently. 

4. Add cubed feta, and mix once only so feta doesn’t fall apart. Top with more cubed feta before serving. Serve immediately.
