😉I was serious when I told you I’d be celebrating Cinco de Mayo, through the weekend.
🍉One of my fave snacks, is fresh watermelon with sea salt. It’s sweet, salty, and juicy. This is that snack in a glass! To make it, you’ll need just 3 ingredients: watermelon, water, and maple syrup. That’s it! Oh ya, you’ll need lime juice and sea salt to “fancy up” the rim of your glass, and garnish with mint leaves.

INGREDIENTS (serves 2-3)
4 c diced watermelon
1 ½ c filtered water (less if you want it sweeter)
2-4 tbsp maple syrup (traditionally sweetened with a few tbsp of sugar, but I went with maple syrup to keep it refined sugar-free)
MAKE IT
1. Blend
2. Strain (save pulp for smoothies). Stir with a spoon to speed up the process.
3. Salt the rim of your class: fill one bowl with juice of 1 lime and set glass top down in the bowl. Next, fill another bowl with 2-3 tbsp sea salt, and transfer glass to salt bowl (turn glass clockwise on the bowl, until salted well).
4. Pour over ice.
5. Garnish with mint leaves.
**GF/DF/LOW-HISTAMINE (I followed mastcell360 low histamine foods list very strictly initially, then added some foods from the SIGHI list as I began to tolerate more foods, all under the care of a dietitian. A low histamine diet is restrictive and not meant to be followed long-term, as nutrient deficiencies may develop.)**
