🍉It’s the best time of year again, watermelon season! One of my fave snacks is watermelon with sea salt and a bit of lime juice. I added a few other ingredients, and made it plant-based ceviche:)! Pair it with your favorite chips, and you have the most refreshing summer snack/din!

INGREDIENTS
1 ½ c seedless watermelon, cubed
½ c mini cucumbers, peeled and cubed
Handful of cilantro, finely chopped
2 scallions, sliced thinly
Juice of ½ lime (½ tsp is low histamine per mastcell360.com, and half lime=1 tsp of lime juice so don’t eat the whole salad!😆)
Sea salt, to taste
1 ½-2 tbsp extra virgin olive oil, to taste
MAKE IT
1. Place cubed watermelon in a bowl and squeeze lime juice all over it. Mix carefully with a spoon. Place it in the refrigerator, and allow it to sit for about 15-20 minutes (so it has time to absorb the lime juice), then drain the liquid from the bowl.
2. Add cucumber, cilantro, scallions, and olive oil to the bowl. Add sea salt and mix carefully so the watermelon doesn’t break down.

**GF/DF/LOW-HISTAMINE (I followed mastcell360 low histamine foods list very strictly initially, then added some foods from the SIGHI list as I began to tolerate more foods, all under the care of a dietitian. A low histamine diet is restrictive and not meant to be followed long-term, as nutrient deficiencies may develop.)**
